  • 250 gr of water;
  • Peel of half a lemon and half an organic orange;
  • Juice of half a lemon

Directions for making one sugar-free fig jam, a few simple steps:

  1. wash the figs thoroughly, peel them and cut them into small pieces (it will be enough to make them into four parts if you use the small ones) and put them to macerate in the fridge or at room temperature in lemon juice (for about 7 hours) cover the bowl with plastic wrap;
  2. Once the maceration time has elapsed, place the fruit, water and citrus peel in a large pot, being careful not to use the white part which, being bitter, could ruin all the sugar-free fig jam;
  3. Cook over low heat for about half an hour, turning from time to time so as not to stick the mixture to the bottom;
  4. Cooking the fruit will become creamy, once cooked and cooled you will have two options:
  • - if you like a few pieces of fig you can leave it like this,
  • - otherwise, if you like more compact and homogeneous jams, just use an immersion blender and chop everything until you get the consistency you like best;
  1. There sugar-free fig jam it is ready, now you just have to taste it or store it in previously sterilized glass jars (remember to keep the jars upside down until it cools down completely, in order to create the vacuum effect).

  • 30 grams of sunflower oil
  • A pinch of cinnamon
  • Brown sugar to taste

For the filling:

  • Sift the flours and add the yeast and sugar to the powders;
  • Add the water and seed oil to the dry ingredients until you get a nice smooth and homogeneous shortcrust pastry (if it is too soft you can add more flour)
  • Your shortcrust pastry is ready to be rolled out (it does not need to rest in the fridge like classic shortbreads) once placed on the pan, add a sheet of parchment paper and pour some dried legumes to cook "in white"
  • Bake at 180 ° for about 20 minutes (preheated oven)
  • Once cooked, pour in the dose of sugar-free fig jam, cinnamon and brown sugar
  • Pass 5 minutes in the oven (grill function at 180 °), check carefully and as soon as it becomes caramel, take it out of the oven immediately if you don't want to risk it burning. Remember that each oven has its own specific temperature and therefore any cooking (especially a tart must be carefully checked both before and after the times indicated by the recipe).
