Notes on ingredients

Cut the cod fillet into small pieces and let it desalt in plenty of water for 24 hours.

If you don't have sparkling mineral water, add a pinch of baking soda to the still water, it will help make the batter more swollen and flavorful.

Choose a well-compacted ricotta; if necessary, before frying, let it dehydrate for a few hours by placing it in a very tight-meshed colander. The ricotta must be very consistent and compact so as to allow an easy cut.

Prefer zero-kilometer products, preferably grown in your own garden!

Remember not to reuse the oil for frying.

Mixed fried Christmas, procedure

First, wash the vegetables and cut them into florets or slices. Place them in a colander and let them dry.

Wash the apple, remove the core and cut it into slices. Once the central core is removed, you can get donut-shaped slices. It is not necessary to remove the peel.

Also cut the ricotta into cubes and let the desalted cod dry.

Prepare the batter in a large, high-sided bowl. For the batter, simply mix sparkling water and flour until you get a thick and smooth mixture, which falls with difficulty. The batter should stick to the edges of the fork.

To the batter, add salt and freshly ground pepper.

Heat plenty of oil in a deep fryer or pan with high sides. The oil must be enough to completely cover the pieces of vegetables in batter.

Dip the ingredients into the batter. Dip a few pieces at a time: dip them well into the batter and transfer them to the boiling oil. Fry a few pieces at a time. The oil must always be hot, avoid lowering the stove otherwise you risk getting aMixed fried Christmassoggy.

As the fried battered pieces turn golden brown, transfer them to absorbent paper. Serve thefried mixed Christmasstill hot.
